PUMPKIN CUPCAKES WITH MAPLE CREAM CHEESE FROSTING

I made these for our Halloween party last weekend, but we all know pumpkin carries over to Novmeber / Thanksgiving.  I'm definitely not sick of it yet! There's something about the smell of fresh baked good lingering though the house that makes me feel more like it's fall (since it's still 80 degrees here).  I just really love an excuse to bake (and thankfully Hunter likes to eat).

I used some substitutes to make my cupcakes gluten free, I've listed both ways.  (I adapted this recipe from Free People Blog)

Here is what you'll need:

3 cups all-purpose flour (or coconut flour for GF)
½ tsp baking soda
1 ½ tsp baking powder
¼ tsp cinnamon (more if you reallllly like cinnamon like us)
¼ tsp pumpkin pie spice
3 eggs
1 cup coconut sugar (for GF or use regular granulated)
1 tsp vanilla extract
1/3 cup fat-free milk
1 15 oz. can pumpkin
2 tbsp honey
1 tbs pure maple syrup
½ cup oil
½ cup applesauce

Preheat the oven to 350° and prepare two pans with cupcake liners or cooking spray (makes about 24 cupcakes). In a large bowl mix dry ingredients; flour, baking soda, baking powder, cinnamon, and pumpkin spice. Using a mixer, beat the eggs, and gradually add the sugar until well combined. Mix in the pumpkin, followed by vanilla, milk, honey, maple syrup, canola oil, and applesauce. Once the mixture is smooth, mix in the dry ingredients and stir to combine. Pour the batter into pans and bake for about 22-25 minutes until the cupcakes are cooked through (use the toothpick trick to check them!).

And now for the frosting!
1 8 oz. package cream cheese, softened

4 tbsp butter, at room temperature
2 cups confectioners sugar
1 tsp vanilla
1 tbsp maple syrup
1/2 tsp cinnamon (again, more if you're cinnamon obsessed like me)

Using a mixer, beat the cream cheese, butter and vanilla until fluffy. Slowly add powdered sugar, scraping the sides of the bowl as you go. Pour in maple and continue mixing until fully combined.  The frosting should be light and fluffy. Spread onto cupcakes and enjoy!
Happy Friday! xox

HELLO NOVEMBER {AN OCTOBER ROUNDUP}

A few work and life snippets from October.  Such a good month, always…

WORK:  I slowed down on custom for hot minute to work on some illustrations and products I've really been wanting to create for my shop. I can't wait to receive samples back from my printer and have them available in the coming weeks.  I've been working on some Christmas items as well, more on those very soon!  The second photo is from a photo shoot for a colloboration that we'll be announcing later in the week. I updated my shop with a handful of new greeting cards, listed some past holiday favorites, and new suites from the summer that are now available for customization.  Check out the new listings here!

HOME:  We decorated for fall just a tiny bit with the cutest heirloom pumpkins from Trader Joes.  I hung some of my vintage paintings in the dining room, they've been needing a home for awhile.  Twiggy has enjoyed laying on the table and basking in the sun from our back windows.  We enjoyed pumpkin everything, including these bagels from Trader Joes.  Lastly, I began painting and reforming my walk-in closet, I'm probably a little too excited about this room of the house.  I decided on a very dark accent wall (the rest white of course). Before and after photos to come!

LIFE:  The weather was finally cool this weekend! We were beyond excited to sit outside and enjoy a chilly ocean breeze.  We actually caught a sunset this month.  Even though a few trips to the beach and to Ringling (the rose photo) were for photo shoots, it's still such lovely scenery to enjoy while working. Lastly, Hunter and I celebrated three years on Halloween.  Life is good.  I'm getting so stoked for the holidays, even though this will be my last chill week and weekend at home, I'm looking forward to all that these next two months have in store.

Happy November (& Monday!) my friends… xox

HELLO OCTOBER : INSPIRATION

Welcoming October with open arms, it's definitely my favorite month.  The weather cools down and the hustle of the holidays is near.  It it a good transition month and promises of much excitement ahead! I love fall color palettes and entertaining, it's a time to get a little more rustic and dark.  The first photo of the bedroom is my main inspiration for this season, I'm obsessed with that rusty color.  You should probably click the link and view that entire home tour (via because I'm addicted).  It's just beyond.

Happy October!  I think I will finally allow myself to partake in pumpkin spice today!

WEEKEND CAMPING INSPIRATION

1 / 2 / 3 / 4 / 5 / 6 / 7 / 8 / 9

We are gearing up for our camping trip this weekend.  I'm so excited to get away from technology from a few days and spend time with Hunter and his family around a bon fire.  Although I will miss my family and our traditions, it's fun to switch up sometimes.  A much needed little vacation.  These photos are so cozy and make me super exciting to be sleeping in the chilly woods all weekend!  xox

PUMPKIN BREAD WITH WALNUTS & CHOCOLATE CHIPS

This pumpkin bread recipe was sooo good.  I made a few changes to the original, but I think there are probably several types of nuts / chips you could add for your own twist and it would still be perfect.  Beware, it makes a few loafs so be ready to share!

You will need:
3 cups white sugar
1 can pumpkin puree
1 cup vegetable oil
2/3 cups water
4 eggs
3 1/2 cups all purpose flour
1 tablespoon ground cinnamon (I put more)
1 tablespoon ground nutmeg
2 teaspoons baking soda
1 teaspoon salt
1 cup chocolate chips
1 - 1 1/2 cups walnuts
(of course the last two are optional, I may even try some roasted pumpkin seeds or almonds next time)

1. Preheat oven to 350.  Grease and flour your pans!
2. Combine sugar, pumpkin, oil, water, and eggs in a large bowl.  Beat until smooth.  Blend in flour, cinnamon, nutmeg, baking soda, and salt.  Stir in nuts and chips.  Fill your baking cans about 1/2 - 3/4 way full
3. Bake for 45-60 minutes.  I would check at around 45 minutes.  Insert a knife or toothpick, if it comes out clean then your bread is ready.  Cool before removing from pan.

Happy baking!

HELLO NOVEMBER

1 / 2 / 3 / 4 / 5 / 6 / 7 / 8 / 9

I can't believe today is November 1st.  Even though I'm a bit saddened by how fast this year has gone by, I'm thankful that the last three months of the year are filled with fun holidays, cool weather, and lots of family / friend gatherings.  The above photos make me extra excited for these things, such a warm and cozy vibe.

Happy Friday xox

SOUTH CAROLINA (VIA INSTAGRAM)

I had an amazing time in South Carolina last week visiting with my grandparents and exploring with my dad.  These are just some of my iPhone snaps from the week.  I can't wait to go through all my "real photos" and share them soon.  It was so chilly everyday and the leaves had just started changing colors.  It was nice to soak it all in and relax for a bit before the holiday madness really kicks up a notch.

Happy Monday

SWEATER WEATHER

After spending the past week at my grandparents house in South Carolina and waking up to 30-40 degree weather I am alllll in the mood to dress up for the cold.  I arrived back in Florida and much to my delight the mornings have been in the 60's! This is exciting stuff people.  Even though it will warm back up next week I'm going to take full advantage of wearing my boots while it lasts. The above is basically my weekend dream outfit.

Happy Saturday xox

FALL OUTFIT INSPIRATION

1 / 2 / 3 / 4 / 5 / 6

Fall has arrived and pumpkin spice is in the air! Although in Florida we won't be really feeling the crisp, cool weather for awhile...it still has me dreaming of cool nights wearing sweaters, tights, scarves, and feeling all cozy.  For now, I'll just keep lusting over these great fall outfits and be looking forward to pulling my sweaters and boots out of the closet.

STYLED: CAMILYN BETH X SHANNON KIRSTEN VOLUME 03

This week's post was such a fun remix of the style shoots Cami and I have been doing together.  This is actually a little sneak peek of what is to come in her fall line...I mean a very tiny preview, she's got a lot of great stuff cookin' up folks!  These shoots have been so much fun for us...it's inspiring to work with one of my best friends (especially since she is someone who just oozes creativity and great ideas), we've been exploring new places, and have time in between to just chat, catch up, and throw ideas back and forth.  It's always nice to step away from the computer and out of the office to do something extra that inspires you. I hope you guys are liking these as much as we are! Keep an eye out for next weeks, it's awesome.  xx
