SUMMER DAYS


Hope everyone had a wonderful weekend and first official day of summer. It's sort of funny to hear that since it's been hot for months here in Florida. Sad.  My fruity print reminds me of summer days... poolside, lots of melon, bright colors, and fruit cocktails!

TREAT PRINTS IN THE SHOP!







A little Monday morning pick-me-up!

A few new prints I added to the shop this weekend. They are available in 8" x 10" and 11" x 14".  I picture these in sets hanging in cute kitchens (that's what I'm doing with mine at least!).  And perfectly sweet gifts for the coffee lover or foodie friend.  xx

HOMEMADE FIG, PEAR, & GOAT CHEESE PIZZA





I can hardly call this a recipe because putting together a homemade pizza is so quick and easy (plus no measurements required!).  Hunter would maybe eat pizza everyday if he could and since cooking can be a task some nights, I've had to come up with some healthy alternatives to one of our favorite foods.

 This night in particular, I cheated with the crust and bought a ready to embellish gluten free one from the store.  You could buy whatever crust for this or make your own if you're feeling realllll ambitious.  I lightly brushed the crust with olive oil.  Next I added arugula, just barely covering the crust.  Then I added the pears and figs (I use about 3/4 of a pear and maybe 5 figs cut in half for this one).  I then added some finely chopped onions. Lightly sprinkle the goat cheese on top (or heavily if you're not on a "diet" like me, because goat cheese is amazing!).  Finally, I seasoned with black pepper and rosemary.  Bake on 425 for about 10 minutes (or follow directions on the crust if using a pre-made one).

LATELY

A few snaps from the past week or so via my iphone / instagram (follow along @shannonkirsten)

Lots of coffees, spring-y things, and trying to get some cooking in when I have the time.  We started an herb garden recently and I just love going outside to clip them before I start cooking dinner.  I've also been trying to make the perfect iced coffee at home (i.e. rather than starbucks every day).  I haven't quite got it right but I will surely share the recipe when I'm pleased with it! Be back with some fun new projects soon. xo

PRETTY SNACKS







French bread, brie cheese, and lemon curd from Trader Joes.  You can't go wrong with a pretty snack like this!  Plus I wanted to use all my recent trinket purchases.  You can never have enough gold things laying around...
