I'm always looking for a fun way to spice up black beans and rice, two staple items in my house.  We are vegetarians so beans and rice is something simple and healthy that we always keep around.  For some reason, having a make your own taco night made them that much more exciting.  I included lots of vegetables; tomato, onions, banana peppers, lettuce, corn, and green peppers.  I used whole wheat fajitas, brown rice, and fat free sour cream.  I added peppers, onions, garlic, and black pepper to the black (& red) beans while they cooked.   Don't forget to squeeze some fresh limes on top of everything.  These were so simple, quick, and quite delicious!
